When asked to write about baked goods that pair well with coffee, my first thought was of my hubby for several reasons. First of all, police officers are known for surviving night shifts on things like donuts & coffee. Secondly, my hubby barely drank coffee when we first started dating but is completely addicted now! He says this is my fault! Lol I would make him flavored lattes with my espresso machine on a regular basis & it wasn't long before I found coffee creamer in the fridge at his house. He now drinks more coffee than I do.  His favorite flavors have always been Irish Cream & Italian Sweet Crème.  My mom who was a lifelong hazelnut fan was even converted to Italian Sweet Crème by my hubby.

     I thought of all the possibilities to pair with coffee & donuts just sounded like the logical first choice. When creating this new flavor, I wanted the donuts to have all the flavors my hubby loves in his coffee. I know you'll love the flavors of these chocolate Irish & Italian cream donuts too!

Chocolate Irish & Italian Cream Donuts

1/4 cup salted butter
1/4 vegetable oil
1/2 cup granulated sugar
1/2 cup dark brown sugar
1 tablespoon Irish Cream coffee syrup
1 egg, plus 1 egg yolk
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/8 cup or 2 tablespoons cocoa powder
1/4 cup buttermilk
1/4 cup Italian Sweet Crème coffee creamer

2 tablespoons butter
1 tablespoon Irish Cream coffee syrup
3-4 tablespoons Italian Sweet Crème coffee creamer
2 cups powdered sugar

Preheat oven to 325 ° Spray a donut pan with flour baking spray.
Cook butter until light brown & bubbly. Set aside to cool.   

Whisk together flour, baking powder, baking soda, salt, & cocoa in a bowl. Set aside.

Place cooled brown butter & oil into the mixing bowl of a stand mixer with the paddle attachment attached. Mix butter & oil. Gradually add in granulated sugar & then dark brown sugar, until mixture is creamed together.

Add in egg, egg yolk & then coffee syrup.

Once combined, gradually add in flour, baking powder, baking soda, salt & cocoa mixture. Add in buttermilk & coffee creamer.  Pour mixture into a gallon ziploc bag & snip a small corner off. Squeeze batter into prepared donut pan.

Bake at 325 ° for about 10 minutes,  until toothpick inserted comes out clean. Makes 18 donuts.

 Cool the donuts in the pan 3-5 minutes before turning out onto wire rack to cool completely.

While the donuts are baking, make the glaze. Microwave the butter in a glass bowl until brown.

Add in 1 tablespoon Irish Cream coffee syrup, 2 cups of powdered sugar & then thin it down with the Italian Sweet Creme coffee creamer. It should take 3-4 tablespoons. You can use more if you want your donuts to have a thinner glaze.

Once the donuts cool, dip them into the glaze & place them on parchment paper or aluminum foil. Dust with cocoa powder to finish. Enjoy with a big cup of coffee!
